Ingredients:
- 1 kg lamb pieces, cleaned and cut into lumps
- 2 huge onions, finely cut
- 2 tablespoons vegetable oil or ghee (explained spread)
- 1 cup plain yogurt (curd)
- 1 tablespoon ginger-garlic glue
- 1/2 cup almond or cashew glue
- 1 cup hacked tomatoes
- 1 teaspoon turmeric powder
- 1 teaspoon red stew powder (acclimate to your flavor inclination)
- 1 tablespoon coriander powder
- 1 teaspoon cumin powder
- 1/2 teaspoon garam masala
- 1/2 cup full-fat cream
- Salt to taste
- New coriander leaves and cut almonds for decorate
Directions:
1. Heat the vegetable oil or ghee in a large pot with a heavy bottom over medium heat.
2. Sauté the onions in the pot, finely sliced, until they become golden brown.
3. Sauté another minute, or until the raw smell goes away, before adding the ginger-garlic paste.
4. Add the chopped tomatoes and cook until they are soft and mushy, stirring frequently.
5. In the pot, combine the mutton pieces with the onion-tomato mixture thoroughly.
6. Salt, coriander powder, cumin powder, and turmeric powder should be added. Blend everything completely to cover the sheep pieces with the flavors.
7. Add the plain yogurt and thoroughly mix. Stir the mutton occasionally as it cooks in the yogurt and spices for a few minutes.
8. Incorporating the cashew or almond paste into the curry gives it a rich, creamy texture.
9. To ensure that the mutton cooks tenderly, add a little water if necessary. Mutton should be cooked through and tender when the pot is covered and simmered.
10. Add the garam masala and full-fat cream to the pot after the mutton has finished cooking. Allow it to cook for a few more minutes after gently mixing to combine.
11. Before serving, garnish the mutton korma with sliced almonds and fresh coriander leaves.
